Vegan BBQ sauce- Keeping with the lazy girl theme, reach for your favorite store-bought BBQ sauce. My top choices are Organicville Original BBQ Sauce and Woodstock Original BBQ Sauce. Avocado oil – This neutral-tasting oil has a very high smoke point, preventing any burning or bitterness. If olive oil is your go-to, cook the king oyster mushrooms over medium to medium-high heat to keep the pan from smoking.

1.     Trim the dry ends of your king oyster mushrooms (aka trumpet mushrooms). Then use a fork to shred the stems and caps into meaty strands that resemble pulled pork.

 

2.     Pour 3 tablespoons of avocado oil into a large saucepan over medium-high heat. Add the shredded mushrooms and stir until well-coated in the oil.

3.     Continue to cook, stirring occasionally to prevent sticking or burning, until browned but not burnt, with little crispy bits clinging to the pan. This takes about 10 minutes.

 

4.     Pour the vegan BBQ sauce over the cooked pulled mushrooms, deglazing the pan as you stir it all together. Taste for seasoning. Depending on the type of BBQ sauce you are using, you may wish to add a pinch of cayenne pepper for a spicy kick or a tablespoon of maple syrup to unsweetened BBQ sauce.
